Valentine’s Day is around the corner, which means that we might be thinking about what treats to get our partners (or to treat ourselves!).

Here’s an idea for making something at home this year. These dark chocolate truffles are delicious and nutritious– and you would never guess it. They’re made with a base of mashed avocados, which are packed with fibre and healthy fats. This means that these truffles will do a bit more to satisfy your appetite compared to some store bought treats, without compromising on the taste.

Dark Chocolate Valentine’s Day Truffles

Yield: 4 servings

Ingredients

  • 1 medium avocado

  • 1 cup dark chocolate chips

  • 1/2 tsp vanilla extract

  • ¼ tsp sea salt

  • 2 tbsp cocoa powder

Instructions

  1. Add the avocado into a food processor and pulse until it becomes well chopped.

  2. In a microwave safe bowl, melt the chocolate chip in 30 second intervals in the microwave while pausing to stir until fully melted.

  3. Add the avocado, vanilla and salt into the chocolate bowl. Stir to combine fully.

  4. Place the mixture in the fridge to chill for 30-45 minutes.

  5. Remove mixture from the fridge and roll into one inch balls.

  6. Add the cocoa to a shallow plate and roll each truffle into the powder until it's well coated.

  7. Store in an airtight container in the fridge for up to 4 days.

You can always get creative with this recipe and add whatever additions you’d like– for some variations, try rolling the finished truffles in shredded coconut, coarse salt, or adding a sprinkle of powdered sugar for some sweetness.
