Watermelon might just be the most refreshing summer food!
Who doesn’t love sitting outside soaking up the warm summer sunshine and enjoying a few slices of sweet, cool watermelon? Well, we have another delicious way for you to get your fill of watermelon with this fresh watermelon and feta salad!
This salad is a great option to pack in some fruits, veggies and healthy fats into your summer food diet. You can use it on the side of your meals to help increase your fibre intake, or you can make it into a meal itself.
During the warmer months, it’s common to have a bit less appetite for hot meals. If you can relate, this salad is great to be turned into a balanced meal option by adding some grilled chicken to top it off.
Fresh Watermelon and Feta Salad Recipe
Yield: 4 servings
-3 cups watermelon, cubed
-1 cup arugula
-1 cup cucumber
-½ cup feta cheese
-⅓ cup walnuts, chopped
-¼ cup basil or mint, chopped
-2 tbsp olive oil
-2 tbsp freshly squeezed lemon juice
-2 tsp dijon mustard
-1 tbsp honey
In a small bowl, combine the olive oil, lemon juice, dijon mustard and honey. Set aside
In a large bowl, add the watermelon, arugula, cucumber, feta cheese, walnuts and basil or mint.
Toss the ingredients together with the combined dressing and enjoy!
