And since many people have challenges incorporating more fish in their diet, these tacos are a great chance to increase your fish intake!

Weeknight Fish Tacos Recipe

Yield: 4 Servings

Ingredients

Fish

  • 1 lb tilapia

  • 2 tsp olive oil

  • 2 tsp chili powder

  • ½ tsp cayenne pepper

  • Salt and pepper to taste

Taco Sauce

  • ½ cup plain greek yogurt

  • ⅓ cup mayonnaise

  • ½ lime, juiced

  • 1 tbsp sriracha

  • 1 tsp smoked paprika

  • 1 small clove of garlic, minced

Toppings and Assembly

  • 12 corn tortillas or tortillas of your choice

  • ½ small head of cabbage, shredded

  • ½ red onion, diced

  • 1 avocado, sliced

  • 1 pint grape tomatoes, quartered

Instructions

  1. Preheat the oven to 350F. In a medium-sized bowl, add the tilapia, olive oil, chili powder, cayenne pepper, salt, and pepper. Mix together to evenly coat the fish in the spice mix.

  2. Add the fish to a baking sheet lined with parchment paper, bake in the pre-heated oven for about 15-18 minutes, or until cooked through.

  3. While your fish is cooking, combine your ingredients for your taco sauce in a small bowl and mix well. Place in the fridge until ready to assemble.

  4. After removing the fish from the oven, wrap the corn tortillas in foil and place them in the oven for 5 minutes to warm.

  5. As you warm the tortillas and the fish cooled for 3-5 minutes, carefully flake the fish with a fork.

  6. You can now assemble your tacos, adding to each: fish, cabbage, red onion, tomatoes, avocado, and topping with taco sauce.

As a bonus to these delicious tacos, you can serve them with a side of a summer salad to boost your fibre intake!
